The inspiration for the Food waste Recipe Book came to us in May 2018 after the Ministry of Climate Change and Environment (MOCCAE) hosted an upcycled iftar, utilizing food that would have otherwise been wasted in partnership with Winnow and Emaar Hospitality Group. The event had challenged people’s perceptions of food waste and how to tackle it. It’s the main inspiration behind our latest project - the Food waste recipe book Cooking with Everything.

Winnow and Ministry of Climate Change are announcing the new project at SIAL, Abu Dhabi in line with the Food waste pledge initiative with the goal of saving 3 million meals yearly by 2020.

The book will feature recipes from chef contributors across the UAE using ingredients that would’ve otherwise been wasted such as upcycled items from their buffets or food trimmings. We want to challenge chefs to see how we can re-imagine food waste for a better world.

This project connects the initiative of the UAE Ministry of Climate Change and Environment to reduce food waste with the creativity of chefs to bring about a book that facilitates the sharing and exchange of knowledge to combat food waste in the Food and beverage sectors.

You will be fully credited in the book for your contributions and it will give you a chance to join the community of chefs in the UAE fighting food waste.
